Fox Bros. Piggly Wiggly will be offering locally grown microgreens from the Hartland Organic Family Farm, located on Highway 83, beginning Saturday, May 24.
Gigh Brucker, produce manager at The Pig, said in a news release the store is always searching for the most nutritious and freshest produce. Greens available will include field pea shoots, sunflower shoots, red Russian kale and broccoli micro-greens.
“One of our goals at Fox Brother’s Piggly Wiggly is to work toward the inclusion of as much locally grown, Wisconsin-grown produce as possible,” she said.
Microgreens are seedlings typically less than 14 days old. A study in the Journal of Agricultural and Food Chemistry reported in 2012 that microgreens tested had four to six times more nutrients, including vitamin C, vitamin E, and beta carotene, than mature leaves from the same plant.
Hartland Organic Family Farm, owned by the Findley family, grows microgreens year round in a high-quality organic vermicomposted soil. According to the farm’s website, the family eventually hopes to raise animals and grow organic hops to be used at local breweries.
“A major aspect of our farm’s plan is to provide an understanding of the benefits of eating organic, sustainable, and locally grown food,” the website states. “We want to provide education on the process as well as the products of our farm.”
