CITY OF OCONOMOWOC - The owner of Maxim's at Oconomowoc Depot is remodeling the former Buca All Day Eatery and Grill building and plans to open a new restaurant in the spring.

The building at 515 E. Wisconsin Ave. has gone unused since a fire in May 2016 shut down Buca. The owners of Buca sold the building to its new owner, Dimitri Glavas, in December, according to property records. 

Glavas said he's planning a restaurant that focuses on "old-fashioned, wood-fired cooking." The menu will include wood fire pizzas and steaks, he said. He has not yet decided on a name for the new restaurant. 

As Glavas and his crews begin work on the building, they continue to run into problems he said, which has led to a delay in work and pushed back the opening until spring. 

"We just removed the air conditioning units, and the roof was in bad shape. We took out a layer of tile to replace it and found out there are three layers of tile under that," Glavas said.

“Everything we touch, there's a bigger problem behind it, and we kind of took some time off to figure out what the plan will be.”

Glavas said he plans to pursue a Class B liquor license from the city, which will allow him to operate a full bar with beer, wine and spirits. 

Glavas owns the Oconomowoc Maxim's location as well as another Maxim's in Brookfield, he said.

Buca All Day Eatery and Grill was operated by Benny Islami from summer 2014 until the 2016 fire. Two Sisters Cafe occupied the building from February 2014 until June 2014, when a note on the door said the business closed because of unresolved issues with the landlord. 

Before Two Sisters Cafe, Around the Lakes restaurant operated at the site for about 25 years.
